although you’d never know it from the images on this blog –
i am a total sucker for salty foods.
more specifically (and this is just between you and me),
i’m a long-time admirer of the anchovy.
i love them on pizza, stirred through pasta and sometimes, just as is.
i really do love the salty little suckers.
these tarts therefore have it all for me –
flaky crisp pastry, a slick of olive tapenade, sweet roast tomato, one salty anchovy and a sprinkle of thyme and parmesan just for good measure.
they could not be simpler either,
which is just one more reason to love these simple small tarts.
all hail the anchovy!
