and can think of no better way to eat one than sitting atop a glorious puddle of pinky-red raspberry curd and golden-crisp pastry.
i have to admit to being a little bit pleased about how these turned out.
they really were the perfect summer dessert –
fruity and light and scarily easy to eat.
the meringue was fluffy, sweet and delicious,
and the raspberry curd just the right side of sour.
there is just one more thing i have to say about these lovely little tarts –
i ate three in one day.
