lamington love

when i think of australia day, i think of one thing –

lamingtons! and as far as i’m concerned, the more the merrier.

i love their soft, golden centre and velvety chocolate-brown coat,
and i especially love their snowy-white coconut cloak.

for me, the best lamingtons have always been the school fete,
fundraising bake-sale, slightly squidgy, homemade variety –
ones that are generous on chocolate and liberal with the coconut.

with lamingtons i’ve found that generally,
the more rustic they look, the tastier they are.
so following this logic, the batch i made yesterday was not bad at all –
just the thing to top off a nice aussie evening filled with friends,
barbeques and beers.

we ate ours with a big scoop of vanilla ice cream and a pot of hot tea.
what’s not to love about that?
