afternoon tea

there is something especially lovely about sunday afternoons.

and having time to sit down for afternoon tea – to bake, sit, and sip –
is just one of the many reasons i love them.

last sunday, as i so often seem to, i felt the need for cake.
and only coconut layer cake would do.

a firm favourite in my family, i think i’ve made this cake more times than any other in my repertoire.
it looks delightfully old-fashioned and spongy,
but is surprisingly moist and deliciously coconutty in flavour.
and it’s made even more so by the addition of jam and cream filling.

i made a simple rhubarb and raspberry jam to fill mine
and paired it with sour cream, which sounds a little odd,
but is in fact the perfect foil for the sweetness of the jam and cake.

well, here’s to sunday afternoons –
if only they came around more than just once a week.
