eggs and caramel

my parents came to visit me over the weekend

and with them came 2 dozen beautiful eggs from their chooks.

‘the girls’ as they are affectionately known have been laying like champions
so mum thought she’d share some of the 7 dozen eggs that were in her fridge.
and very glad i was too – for there really is nothing like home-grown (or laid) eggs.
their yolks are deliciously golden and they taste so much better than their supermarket counterparts.

the next step was deciding what to make with all the lovely fresh eggs –
creme caramels, i thought, would be a worthy use.
think creamy baked custard and dark toffee-caramel.
quite decadent and quite delicious.

we ate ours with baked rhubarb for dessert last night,
but my second one this afternoon straight out of the fridge was just as delicious.
