rhubarb tray bake

rosy-red rhubarb and lemon cake. a match made in heaven.

i have always been a big fan of rhubarb.
i love its pretty-pink hue and tart, fruity taste.

recently i bought a beautiful new cookbook –
and ever since, i have been eyeing-off a recipe for apricot and orange tray bake.
not being in possession of any fresh apricots,
but having recently bought a beautiful bunch of rosy-red rhubarb
i decided to make a rhubarb and lemon version.

i baked the rhubarb until it was pink and blushing
then placed it on top of the lemon-scented cake batter in neat little rows.

once baked the cake emerged all lovely and golden-ly puffed –
the perfect afternoon delight when served still warm from the oven
with a milky-hot cup of tea.

it would also be delicious for dessert.
with a big splodge of vanilla custard. yum.
