weekend loafing

what to do when you feel like cake, but feel that you shouldn’t eat cake?

you make a loaf instead! it tastes like cake, it looks like cake –
but somehow it seems more wholesome and healthy in loaf-form.

in my mind there is no better time for loaf-ing than the weekend.
so when i came across a recipe for gingerbread, apple and pecan loaf last saturday i had to make it.

dark brown sugar, golden syrup and melted butter combined to form an oozy, caramel that gave this loaf a delicious sweet denseness.
unexpected bursts of crystalised ginger were warmingly zingy,
and chunks of pecan and soft apple helped make this loaf even more delicious.

it was perfect for afternoon tea with a cup of milky-hot tea.
