apples and rain

yesterday dawned with distinctly uncheerful weather.

this dreary weather called for cheerful cooking –
and as i have mentioned before, to me this can only mean one thing.


after an early morning foray to the farmers markets we came home with a beautiful bag of blushing apples. i roasted these in a happy mix of cinnamon, honey and mixed spice and the smell that emerged from the oven after an hour of cooking was definitely cheering!

i then topped the tender sticky apples with some raspberries and a soft sour-cream pastry, sprinkled it with raw sugar and returned it to the oven for another half hour.

by then the pastry had turned into a delicious, light, cake-like crust, so we ate the pudding warm from the oven, straight out of the dish with double cream.
the result? a hug in food-form.
