quinces and caramel

for me quinces are the quintessential autumn fruit.

whenever i see quinces their pale green-hued skin makes me think
of crisp autumn mornings and crunchy-red fallen leaves.

with this in mind, and two golden quinces in my fruit bowl –
when i stumbled upon maggie beer’s recipe for apple pudding,
i had to try it with quinces.

the result? the perfect autumnal afternoon tea.

glossy caramel quinces sat atop a silky olive oil sponge
which i drizzled with more caramel syrup and served with
a dollop of thick cream. delightful. i do love autumn.

thanks maggie, you’ve done it again.
